Mini Victoria Sponges

In my White Chocolate Cupcakes blog post, I told you that for my dad’s birthday party I made a couple of different varieties of cakes and to look out for another recipe – and here it is! I had this idea after wanting to make something with a plain sponge, but also something a bit different than anything I’ve made before. And to top it off, these Mini Victoria Sponges are so cute!

I don’t think you can go wrong with a Victoria Sponge – what’s not to like!? They’re also perfect for when you’ve got other more chocolatey desserts on offer too in case any of your guests prefer a more simple cake. And again, these mini cakes are great as they mean you can try a couple of different things instead of having to choose between them!

They did take a bit more effort and time than just making a big Victoria Sponge, but for parties or special occasions I think that they’re definitely worth it… I hope you enjoy making them too!

Ingredients:
Sponge
225g self raising flour
225g butter
225g caster sugar
4 eggs
2 tsp baking powder
Filling
125g icing sugar
125g butter
1tsp vanilla extract
Raspberry Jam

Method:

  1. Preheat the oven to 180C
  2. Mix the flour, caster sugar, butter, baking powder and eggs into a bowl and whisk until blended and smooth
  3. Pour into a baking tin (a fairly large, flat tin is best, but make sure the sides are high enough that it doesn’t spill!)
  4. Bake for 25 minutes, or until golden and a knife can go in and come out clean
  5. Leave to cool on a wire rack
  6. Use a small circular cutter (or I actually just used the lid of the baking powder, which is circular, and cut around the shape with a knife!) to create the mini sponges
  7. Once you’ve got the circular sponges out of the baking tin (I cut out the shapes but removed the excess sponge first so that I could carefully lift out the sponge I wanted), cut them in half so that you can put in the filling
  8. Cream together the butter, icing sugar and vanilla extract
  9. Pipe the butter cream onto the top of the bottom half of the sponges, and jam onto the underneath of the top sponges (just put them upside down to do this!)
  10. Put the two halves together, and enjoy!
