White Chocolate Cupcakes

I love both white chocolate and cupcakes, but have never put them together into one creation before! So I decided to give it a go, and, thankfully, they turned out deliciously!

I made these for my dad’s birthday party, and since his birthday cake was milk chocolate (and there was a lot of chocolate on it!!) I wanted to do something a little different so there was some variation. I also baked something else for the party, and that recipe will be coming soon so make sure you’re following my blog and keep your eyes peeled!! But these cupcakes were really easy to make and didn’t take long to make at all. I find cupcakes perfect for a party, where people just want to grab something easy to eat, and it saves the time and faff of cutting into big cakes (and since they’re pretty small you can always have a try of a different dessert too, right?!)

I used white chocolate for the cupcake, buttercream and decorations, but you could always mix it up and add in different flavours – maybe milk/dark chocolate to keep with the theme, or something like raspberry or peanut butter to make it a little different!

Cupcakes

Ingredients:
225g self-raising flour
225g butter
225g caster sugar
4 eggs
2tsp vanilla extract
Pack of white chocolate buttons

Method:

  1. Pre-heat the oven to 180C
  2. Cream the butter and sugar together until smooth
  3. Add in the flour, eggs and vanilla extract, and whisk together
  4. Place 12 cupcake cases into the baking tin, and spoon the mixture into them
  5. Bake for around 15-20 minutes, or until golden and a knife can be put in and come out clean
  6. Leave to cool on a wire rack

Topping

Ingredients:
250g butter
350g icing sugar
1tsp vanilla extract
100g bar of white chocolate
Pack of white chocolate buttons

Method:

  1. Cream together the butter and icing sugar until smooth
  2. Add in the vanilla extract and mix in
  3. Melt the white chocolate and leave to cool slightly
  4. Mix into the buttercream (if the mixture is too runny, add more icing sugar)
  5. Pipe onto the cupcakes
  6. Add buttons as decorations
